Pumpkin Swirl Cheesecake

There’s something special about a creamy cheesecake swirled with warm pumpkin spice. This Pumpkin Swirl Cheesecake brings together a rich cheesecake filling and a smooth pumpkin layer in every beautiful slice. The cinnamon, nutmeg, and pumpkin flavors make it a perfect dessert for crisp fall days, Thanksgiving gatherings, or a cozy weekend at home.

It looks impressive on the table, yet it’s simple enough to make without any fuss. Serve it chilled with a dollop of whipped cream, or enjoy it just as it is. Each bite delivers a delicious balance of creamy cheesecake and warmly spiced pumpkin flavor.

Why You’ll Love This Recipe

  • Zero artistic ability required. You literally drag a knife through the batter to create the swirl.
  • Forgiving crust. The gingersnap crust hides cracks and adds pure autumn flavor.
  • Make-ahead magic. You can prepare this cheesecake days before serving.
  • The ultimate fall flex. This is arguably the best pumpkin cheesecake recipe fall has to offer without the bakery price tag.

Perfect Pairings

These go perfectly with a cozy night in and zero plans.

  • A cold glass of milk balances the sweetness.
  • Strong black coffee cuts through the caramel topping.
  • A large dollop of slightly unsweetened whipped cream softens every slice.
  • The Thanksgiving dessert table gives this thanksgiving cheesecake a dramatic centerpiece

Tools You’ll Need

Nothing fancy, I promise.

  • springform pan You need this so you can actually get the cake out. 9-inch or 10-inch works fine.
  • Food processor. A heavy rolling pin and zip-top bag work when you need to crush gingersnaps manually.
  • Large roasting pan. The pan holds the water bath during baking.
  • Measuring cup. A flat base helps you press the crust firmly.

Ingredients

Gingersnap Cookie Crust

  • 1 and 1/2 cups gingersnap cookie crumbs – Nabisco brand is weirdly too moist, so grab a different one or your crust will be mushy.
  • 1/4 teaspoon ground ginger – Because we are leaning hard into the spice.
  • 1/4 teaspoon ground cinnamon – Non-negotiable for that fall flavor.
  • 1/4 cup unsalted butter – Melted. This is the glue holding our lives together.
  • 1/4 cup granulated sugar – Just for a little extra sweetness.

Cheesecake

  • 32 ounces full-fat brick cream cheese – Do not buy the spreadable tub stuff unless you want soup.
  • 1 and 1/2 cups granulated sugar – Standard white sugar is all you need.
  • 1/3 cup full-fat sour cream – Must be room temperature, trust me on this.
  • 1 teaspoon pure vanilla extract – Measure with your heart, I usually spill a little extra.
  • 3 large eggs – Also room temperature, so they do not shock the cream cheese.
  • 1 cup pumpkin puree – Make sure it is plain puree, not the pre-sweetened pie filling.
  • 1 and 1/2 teaspoons ground cinnamon – More spice makes everything nice.
  • 1 and 1/2 teaspoons pumpkin pie spice – If you do not have it, just use a mix of nutmeg, cloves, and allspice.
  • Toppings – Salted caramel and whipped cream for hiding any cracks.

How To Make Pumpkin Swirl Cheesecake

Do not let the water bath intimidate you; it is just a hot tub for your dessert.

  1. Prep the oven: Adjust the oven rack to the lower-middle position and preheat to 350°F (177°C). If your oven runs hot like mine, maybe invest in an oven thermometer someday, but today we just pray.
  2. Make the crust: Pulse the gingersnap cookies into crumbs, mix with butter and spices, and press firmly into your pan. I use the flat bottom of a measuring cup to pack it down—if a few chunks survive, that is between you and the food processor, nobody else needs to know.
  3. Mix the base batter: Beat the cream cheese and sugar until smooth, then add sour cream, vanilla, and eggs one at a time. Stop mixing the second that last egg disappears; over-mixing is how you get a weird rubbery texture.
  4. Create the pumpkin batter: Scoop out 2 cups of the plain batter and mix it with the pumpkin puree and spices. You are essentially making a two-for-one pumpkin cheesecake recipe right in the same bowl.
  5. Swirl it up: Alternate spoonfuls of plain and pumpkin batter into the pan, then drag a knife through it. It does not need to be neat, and honestly, the messier you swirl it, the cooler it looks when baked.
  6. The water bath: Wrap the bottom of your pan in foil, put it in a roasting pan, and pour an inch of boiling water around it. If you want to know the science behind this, a water bath prevents the top from cracking like a dry desert.
  7. Bake and cool: Bake for 55-70 minutes until the center slightly wobbles, then turn the oven off and leave the door cracked for an hour. I once tried to yank it out immediately and it cracked straight down the middle—leave it in the oven!
  8. Chill: Cool completely on the counter, then refrigerate for at least 4 hours. Patience is hard, but warm cheesecake is basically cheese soup.

♥ The Misfit Tips!

  • Use room temperature ingredients. Cold cream cheese creates lumps and can produce a greasy texture if you microwave it.
  • Use heavy-duty foil. Thin foil can allow water to seep into the crust.
  • Avoid overmixing. Excess air can cause the cheesecake to puff and crack.
  • Make it ahead. Preparing the cheesecake two days before Thanksgiving gives the texture time to improve.
  • Swirl gently. A few loose waves create a clearer pattern than aggressive mixing.

Make It Yours

  • Replace the gingersnap crust with graham cracker crumbs and add extra cinnamon.
  • Drizzle salted caramel over each slice instead of the whole cheesecake.
  • Add chopped pecans to the crust for extra crunch.
  • Mix a little maple syrup into the pumpkin batter for a deeper fall flavor.

How to Store

  • Fridge: Store the cheesecake in an airtight container for up to five days.
  • Freezer: Freeze the fully cooled cheesecake without toppings for up to three months.
  • Reheat: Do not reheat cheesecake. Serve it cold from the refrigerator.
  • Storage note: Add caramel and whipped cream immediately before serving.

Ingredients

Gingersnap Cookie Crust
  • 1 and 1/2 cups (180g) gingersnap cookie crumbs*
  • 1/4 teaspoon each: ground ginger and ground cinnamon
  • 1/4 cup (4 Tbsp; 56g) unsalted butter melted
  • 1/4 cup (50g) granulated sugar
Cheesecake
  • 32 ounces (904g) full-fat brick cream cheese softened to room temperature
  • 1 and 1/2 cups (300g) granulated sugar
  • 1/3 cup (80g) full-fat sour cream at room temperature
  • 1 teaspoon pure vanilla extract
  • 3 large eggs at room temperature
  • 1 cup (227g) pumpkin puree*
  • 1 and 1/2 teaspoons ground cinnamon
  • 1 and 1/2 teaspoons store-bought or homemade pumpkin pie spice*
  • topping suggestions: salted caramel and whipped cream

Equipment

  • Springform pan
  • Food processor
  • Large roasting pan
  • Measuring cup

Method

  1. Adjust the oven rack to the lower-middle position and preheat oven to 350°F (177°C).
  2. Using a food processor, pulse the gingersnap cookies into crumbs. Pour into a medium bowl and stir in ginger, cinnamon, sugar, and melted butter until combined. (You can also pulse it all together in the food processor.) Mixture will be sandy.
  3. Press firmly into the bottom and slightly up the sides of a 9-inch or 10-inch springform pan. No need to grease the pan first. I use the bottom of a measuring cup to pack the crust down tightly. Pre-bake for 10 minutes. Remove from the oven and place the hot pan on a large piece of aluminum foil. The foil will wrap around the pan for the water bath in step 5. Allow crust to slightly cool as you prepare the filling.
  4. Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese and granulated sugar together on medium-high speed in a large bowl until the mixture is smooth and creamy, about 2 minutes.
  5. Add the sour cream and vanilla extract, then beat until fully combined. On medium speed, add the eggs one at a time, beating after each addition until just blended. After the final egg is incorporated into the batter, stop mixing. To help prevent the cheesecake from deflating and cracking as it cools, avoid over-mixing the batter as best you can.
  6. Scoop out 2 cups of batter and place in a medium mixing bowl. Stir in the pumpkin, cinnamon, and pumpkin pie spice until combined. Begin adding spoonfuls of each batter, the plain and the pumpkin, on top of the crust. Alternate until all the batter is used and pan is filled. Using a toothpick or knife, swirl the batters together by dragging the toothpick top to bottom, then left to right.
  7. If needed for extra visuals, see my How to Make a Cheesecake Water Bath; the visual guide will assist you in this step. Boil a pot of water. You need 1 inch of water in your roasting pan for the water bath, so make sure you boil enough. I use an entire kettle of hot water.
  8. Place the pan inside of a large roasting pan. Carefully pour the hot water inside of the pan and place in the oven. (Or you can place the roasting pan in the oven first, then pour the hot water in. Whichever is easier for you.)
  9. (Note: if you notice the cheesecake browning too quickly on top, tent it with aluminum foil halfway through baking.) Bake cheesecake for 55-70 minutes or until the center is almost set. When it’s done, the center of the cheesecake will slightly wobble if you gently shake the pan.
  10. Turn the oven off and open the oven door slightly. Let the cheesecake sit in the oven for 1 hour as it cools down. Remove cheesecake from the oven and allow to cool completely at room temperature, then refrigerate the cheesecake for at least 4 hours or overnight.
  11. Use a knife to loosen the chilled cheesecake from the rim of the springform pan, then remove the rim. Add toppings, if desired. Using a clean sharp knife, cut into slices for serving. For neat slices, wipe the knife clean and dip into warm water between each slice.
  12. Cover and store leftover cheesecake in the refrigerator for up to 5 days.

Recipe Notes

Make Ahead & Freezing:
Make the cheesecake up to 1 day ahead and refrigerate until serving. Freeze for up to 3 months. Thaw overnight in the refrigerator before serving.
Gingersnap Cookies:
Use dry store-bought gingersnaps for the crust. Avoid Nabisco, which can be too moist. You can also use a graham cracker crust and adjust the cinnamon and ginger to taste.
Pumpkin:
Canned pumpkin gives the best flavor and firmer texture. Libby’s works well. Do not use pumpkin pie filling.
Pumpkin Pie Spice:
Use store-bought or homemade pumpkin pie spice. For individual spices, use 1/2 teaspoon each ginger and allspice, plus 1/4 teaspoon each nutmeg and cloves. Keep the 1 1/2 teaspoons of cinnamon.
Room Temperature Ingredients:
Bring all cold ingredients to room temperature before mixing. This helps them combine smoothly and prevents a lumpy batter or over-mixing.
Alternate Water Bath:
Place the cheesecake on the center rack and a large metal pan on the bottom rack. Pour 1 inch of boiling water into the lower pan and close the oven immediately. This creates steam without placing the cheesecake directly in water.

🙋‍♀️ Frequently Asked Questions

🥣 You press a spiced gingersnap crust into a springform pan. You beat the cream cheese base, divide the batter, mix pumpkin and spices into one portion, alternate the batters, swirl them with a knife, and bake the cheesecake in a water bath.

🔪 You alternate spoonfuls of plain and pumpkin batter across the crust. You drag a knife through the batter in gentle waves, then stop before the colors blend together.

🥛 Room temperature cream cheese blends smoothly with the sugar, sour cream, and eggs. Cold cream cheese can create lumps and uneven texture in the finished cheesecake.

🌡️ The water bath surrounds the pan with gentle, even heat and helps prevent rapid temperature changes. This method can reduce cracking and support a smooth, creamy texture.

✅ You can bake the cheesecake up to two days before serving. You should refrigerate it uncovered until fully cold, then cover it tightly and add toppings just before serving.
