  • 2 cups mixed olives pitted
  • 1/3 cup extra virgin olive oil
  • 6 cloves garlic smashed
  • 1 shallot quartered
  • 1 lemon quartered
  • 2 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • chili flakes
Honey Whipped Feta
  • 1 cup 8 ounces crumbled feta cheese
  • 3 ounces cream cheese at room temperature
  • 2-3 tablespoons honey
  • black pepper

Method
 

  1. Bake the Olives:
    Preheat the oven to 450°F. Add the olives, olive oil, garlic, shallot, lemon, fresh thyme, oregano, and a generous pinch of chili flakes to a baking dish. Toss everything together to coat evenly. Bake for 20–25 minutes, until the garlic is golden, the herbs are fragrant, and the olive oil is sizzling.
  2. Whip the Feta:
    While the olives are baking, add all the feta ingredients to a food processor. Pulse until the mixture becomes smooth, creamy, and well combined. If making it ahead, cover and refrigerate the whipped feta for up to 3 days.
  3. Assemble and Serve:
    Spoon the whipped feta into a serving bowl and spread it into an even layer. Spoon the warm olives and their flavorful olive oil over the top. Serve immediately with crusty bread or your favorite crackers for dipping.
