No-Bake Monster Cookies

These monster cookie energy bites prove that a genuinely satisfying snack can come together with nothing more than a mixing bowl, a food processor, and a few pantry staples. This no bake monster cookie energy balls recipe relies on pulsed oats and processed peanut butter to avoid the crumbly texture that ruins so many other no-bake bar attempts. Whether served as an after-school treat or a late-night Netflix snack, these peanut butter oat energy balls earn a permanent spot in the regular rotation.

  • 3/4 cup creamy peanut butter
  • 6 tablespoons quick cooking oats (pulsed in food processor)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 11/2 cups quick cooking oats (not pulsed in the food processor)
  • 10 tablespoons miniature M&M's (divided into 8 tablespoons and 2 tablespoons)
  • 1 cup semi-sweet chocolate chips
  • 3 tablespoons heavy cream

Equipment

  • 8-inch baking dish
  • Food processor
  • large mixing bowl

Method

  1. Prepare an 8-inch baking dish by lining it with either foil or parchment paper. Set aside.
  2. In a large mixing bowl, cream together the butter and sugars. Add the peanut butter and mix well.
  3. Add in the 6 tablespoons of quick cooking oats (pulsed in food processor), vanilla, and salt. Slowly add the 1½ cups of oats. Fold in ½ cup of M&M’s.
  4. Press the mixture into the prepared pan.

  6. Cover and refrigerate for at least 2 hours or until set. Cut into squares.

Recipe Notes

Notes
Make sure your butter is at room temperature and not melted, otherwise, it won’t blend with the sugars properly.
Make sure you don’t skip the refrigeration step. The cookie bars need time to set, and it will make them much easier to cut once chilled.
