Ingredients

  • 3/4 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 3 Tablespoons molasses
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoons salt
  • 1 cup powdered sugar
  • 1 Tablespoon warm water
  • 12 large marshmallows (cut in half)
  • Miniature Reese’s peanut butter cups (cut in half)
  • mini chocolate chips
  • orange food coloring (for noses)
  • sprinkles (optional)

Equipment

  • Cookie scoop
  • Baking sheet
  • Piping bag or zip-top bag

Method

  1. Make the Dough
In a large mixing bowl, cream the softened butter and sugar together for 2 to 3 minutes, until the mixture becomes light and fluffy. Add the egg and vanilla extract, then beat until everything is well combined. Scrape down the sides of the bowl as needed to ensure the ingredients are evenly incorporated.
  2. Add the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, stirring until just combined. It is fine if a few streaks of flour remain. Avoid overmixing, as this can develop too much gluten and make the cookies tough instead of tender.
  3. Chill the Dough
Wrap the cookie dough tightly in plastic wrap and refrigerate for at least 1 hour. Chilling is important because it firms up the butter and helps prevent the cookies from spreading too much during baking. Cold dough also makes it easier to achieve soft, thick cookies that hold their shape.
  4. Bake the Cookies
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop tablespoon-sized portions of dough and arrange them on the prepared baking sheet, leaving about 2 inches between each cookie.
Bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. The centers may still look slightly underdone when you remove the cookies from the oven, but they will continue to set as they cool.
  5. Add the Marshmallows
As soon as the cookies come out of the oven, gently press one large marshmallow into the center of each cookie. Be careful not to press too hard, as the cookies may crack. Allow the cookies to cool completely on the baking sheet. The residual heat will help soften the marshmallows and allow them to settle into the cookies.
  6. Decorate the Snowmen
Once the cookies have cooled completely, use white icing to draw a wavy puddle around the base of each marshmallow, creating the appearance of a melting snowman.
Using black decorating gel, add two small dots for the eyes, a little smile, and three buttons down the front of each snowman. Finish with a tiny orange dot for the nose. Let the icing set before serving or storing the cookies.
