Prepare the Baking Dish: Preheat the oven to 375°F. Lightly spray an 8×8-inch baking dish with cooking spray and set aside. Make the Creamy Base: In the bowl of a stand mixer fitted with the paddle attachment, or using a hand mixer and large bowl, combine the mayonnaise, softened cream cheese, Worcestershire sauce, hot sauce, ground mustard, salt, and black pepper. Beat on medium-high speed for 3–5 minutes, until mostly smooth and creamy. Add the Cheese and Pimentos: Remove the bowl from the mixer. Add the shredded cheddar, pepper jack, sliced pimentos, and chopped green onion. Use a spatula to gently fold everything together until evenly combined. Transfer to the Dish: Spoon the cheese mixture into the prepared baking dish and spread it into an even layer, smoothing the top with a spatula. Bake: Bake for 15–20 minutes, or until the cheese is fully melted and the dip is hot, bubbly, and lightly golden around the edges. Serve: Let the dip cool for a few minutes, then serve warm with crackers, bread, chips, or your favorite dippers

Freezing: Freezing is not recommended, as the cream cheese can separate and become grainy when thawed. For the best texture, enjoy it fresh.
