Fudgy Oreo Brownies

These oreo brownies prove that a genuinely fudgy dessert needs nothing beyond a microwave, one bowl, and a bag of crushed cookies. This oreo brownie recipe skips the double boiler entirely while still delivering a dense, chocolatey square loaded with crunch. Whether folded into the batter or pressed on top for extra crunch, this oreo cookie and brownie combination disappears fast at any gathering.

Ingredients
  

  • 1 1/4 cups unsalted butter
  • 2 1/2 cups packed light brown sugar
  • 4 large eggs at room temperature
  • 1 1/2 cups Dutch processed cocoa powder
  • 3/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2/3 cup all-purpose flour
  • 16 Oreo cookies crumbled into pieces

  • Microwave-safe bowl

Method
 

  1. Preheat oven to 350°F. Grease and line a 9″x9″ pan with parchment paper and set aside.
  2. In a large microwave-safe bowl, combine butter and sugar. Microwave for 30 seconds, then remove and stir with a whisk. Repeat process 2 more times. Though granules of sugar will remain, the goal is to get the mixture to a glossy finish.
  3. Allow mixture to cool slightly, then add in eggs one at a time, whisking in between each addition. Whisk until the mixture lightens in color slightly.
  4. Add in cocoa powder, salt, and vanilla extract. Fold in flour until just combined. Last, fold in the Oreo cookie pieces.
  5. Pour mixture into prepared baking pan and bake for roughly 45 minutes, testing for doneness by inserting a knife into the center of the brownies beginning at 40 minutes. It might take up to 55 minutes for them to cook through depending on your oven!

Recipe Notes

Cocoa powder: I use Dutch processed for the darkest flavor, or regular unsweetened in a pinch.
Oreos: I crumble mine before folding them into the batter.
Pan: I always use metal, never glass, for even baking.
Doneness: I pull the pan when the knife still looks a little gooey.
Cooling: I let the pan cool completely before slicing
