Method
 

  1. Make the caramel
    You add the sugar and water to a medium saucepan and heat it over medium heat, watching it turn amber without stirring. Stirring at this stage crystallizes the sugar and turns it into a rock stuck to the bottom of the pot.
  2. Coat the mold
    You pour the hot caramel into the mold and swirl it around to coat the bottom evenly. The caramel hardens quickly at this stage, which is exactly the intended result.
  3. Mix the custard
    You whisk the eggs, yolks, condensed milk, whole milk, espresso powder, vanilla, and salt together in a large bowl until smooth, avoiding an overly aggressive whisking motion that traps extra air bubbles.
  4. Strain the mixture
    You pour the custard through a fine mesh strainer into another bowl, catching any small cooked egg lumps along the way.
  5. Fill the mold
    You pour the strained custard directly over the hardened caramel, trusting the process even though pouring liquid over solid candy feels counterintuitive.
  6. Prepare the water bath
    You place the filled mold into a large roasting pan and carefully pour hot water into the roasting pan until it reaches halfway up the sides of the mold, avoiding splashes into the custard itself.
  7. Bake
    You bake the flan at 325°F for fifty to fifty-five minutes, checking that the edges look set while the center still wobbles gently like a water balloon when the pan shakes slightly.
  8. Chill completely
