Hummus with lamb kofte and beetroot salad

- half cup sparkling mint leaves
- half of cup coriander leaves
- 550g lamb mince
- 60g smooth feta, crumbled
- 2 green shallots, finely chopped
- 45g (1/4 cup) pine nuts, toasted
- 2 garlic cloves, beaten
- 2 half teaspoons ground cumin
- half of-3/four teaspoon dried chilli flakes
- 2 x 400g cans chickpeas, rinsed, drained
- 1 tablespoon tahini
- 60ml (1/four cup) lemon juice
- 60ml (1/four cup) water
- 2 half of tablespoons extra virgin olive oil, plus more, to serve
- 1 small (approximately 200g) beetroot, peeled, reduce into matchsticks
- Lemon wedges, to serve
The instruction how to make Hummus with lamb kofte and beetroot salad
- For the kofte, line a plate with baking paper. Finely chop 1/2 the herbs. Place the chopped herbs, mince, feta, shallot, 2 tbs pine nuts, 1 garlic clove, 2 tsp ground cumin and 1/4-half tsp dried chilli flakes in a meals processor. Season. Process until the mixture just comes together (do not over system). Shape tablespoonfuls of the aggregate into balls. Transfer to the coated plate.
- For the hummus, location the chickpeas, tahini and remaining garlic, cumin and chilli in a clean food processor. Process until blended. Combine lemon juice, water and a couple of tbs oil in a jug. With the motor strolling, add the lemon mixture to the chickpea combination in a slow consistent stream until clean and mixed. Season.
- Heat the final oil in a massive non-stick frying pan over medium heat. Cook the kofte, turning, for 8 minutes or until cooked through. Transfer to a plate.
- Combine the beetroot, remaining herbs and closing pine nuts in a bowl. Season. Divide hummus amongst plates. Top with kofte and beetroot salad. Drizzle with extra oil and serve with lemon wedges.
