  1. half cup sparkling mint leaves
  2. half of cup coriander leaves
  3. 550g lamb mince
  4. 60g smooth feta, crumbled
  5. 2 green shallots, finely chopped
  6. 45g (1/4 cup) pine nuts, toasted
  7. 2 garlic cloves, beaten
  8. 2 half teaspoons ground cumin
  9. half of-3/four teaspoon dried chilli flakes
  10. 2 x 400g cans chickpeas, rinsed, drained
  11. 1 tablespoon tahini
  12. 60ml (1/four cup) lemon juice
  13. 60ml (1/four cup) water
  14. 2 half of tablespoons extra virgin olive oil, plus more, to serve
  15. 1 small (approximately 200g) beetroot, peeled, reduce into matchsticks
  16. Lemon wedges, to serve

The instruction how to make Hummus with lamb kofte and beetroot salad

  1. For the kofte, line a plate with baking paper. Finely chop 1/2 the herbs. Place the chopped herbs, mince, feta, shallot, 2 tbs pine nuts, 1 garlic clove, 2 tsp ground cumin and 1/4-half tsp dried chilli flakes in a meals processor. Season. Process until the mixture just comes together (do not over system). Shape tablespoonfuls of the aggregate into balls. Transfer to the coated plate.
  2. For the hummus, location the chickpeas, tahini and remaining garlic, cumin and chilli in a clean food processor. Process until blended. Combine lemon juice, water and a couple of tbs oil in a jug. With the motor strolling, add the lemon mixture to the chickpea combination in a slow consistent stream until clean and mixed. Season.
  3. Heat the final oil in a massive non-stick frying pan over medium heat. Cook the kofte, turning, for 8 minutes or until cooked through. Transfer to a plate.
  4. Combine the beetroot, remaining herbs and closing pine nuts in a bowl. Season. Divide hummus amongst plates. Top with kofte and beetroot salad. Drizzle with extra oil and serve with lemon wedges.
