  2. 400g packet chopped vegetable soup mix (see word)
  3. four rashers shortcut rindless bacon, chopped
  4. 1 cup red lentils
  5. three massive tomatoes, chopped
  6. three cups Massel vegetable liquid inventory
  7. 100g green beans, trimmed, chopped
  8. 2 tablespoons chopped sparkling flat-leaf parsley leaves

  1. Heat oil in a large saucepan over medium heat. Add vegetable mix and bacon. Cook, stirring on occasion, for three to five minutes or till vegetables begin to melt.
  2. Add lentils, tomato, stock and a couple of cups bloodless water. Cover. Bring to the boil. Reduce warmth to medium-low. Cook for 15 to twenty mins, including beans within the closing 5 mins of cooking, or until lentils are smooth. Season with salt and pepper. Stir in parsley. Serve.
