  1. 2 tsp light soy sauce
  2. 2 tsp Chinese rice wine (shao hsing)
  3. 2 tsp water
  4. 2 tsp cornflour
  5. 400g pork mince
  6. 60ml (1/four cup) peanut oil
  7. 500g pkt fresh wheat noodles
  8. 2 garlic cloves, finely chopped
  9. 2 tsp sparkling ginger, finely chopped
  10. 1 clean long red chilli, sliced
  11. 2 tbs easy peanut butter
  12. 1 tbs mild soy sauce, more
  13. 500ml (2 cups) Massel chicken style liquid stock
  14. 1 tsp caster sugar
  15. Sliced fresh purple chilli, to serve
  16. Sliced green shallots, to serve
  17. Coriander leaves, to serve

The instruction how to make Crispy red meat with noodles

  1. Combine the soy sauce, rice wine, water and cornflour in a bowl. Add the red meat mince. Use your fingers to mix till properly combined. Set aside for 15 minutes to marinate.
  2. Heat the oil in a wok over high heat until smoking. Add half of the beef combination. Stir-fry for 4 minutes or until crisp. Use a slotted spoon to switch to a plate covered with paper towel. Repeat with remaining mince, reheating wok among batches. Cover to hold warm.
  3. Meanwhile, cook noodles following packet guidelines. Divide amongst serving bowls. Drain all however 1 tbs of the oil from wok. Add garlic, ginger and chilli. Stir-fry for 1 minute or till aromatic. Add peanut butter and soy sauce. Gradually upload stock. Simmer for 5 minutes or till barely decreased. Season with sugar. Divide among bowls. Top with pork. Scatter over chilli, shallot and coriander.
