  8. 2 small (approximately 400g) single hen breast fillets, extra fats trimmed, halved lengthways, thinly sliced crossways
  9. 1 bunch English spinach, ends trimmed, washed, coarsely chopped
  10. Crusty bread, to serve

  1. Heat the oil in a big saucepan over medium warmth. Add the onion and cook dinner, stirring, for 5 minutes or until tender. Add the garlic and cook, stirring, for 1 minute or until aromatic.
