  1. Whisk 1/3 cup olive oil, 2 tablespoons fresh lime juice, half of teaspoon finely grated lime rind, 1 garlic clove, crushed, 1 small red chilli, deseeded, finely chopped, half of teaspoon caster sugar. Season.
