  1. 1 medium carrot, peeled, grated
  2. 1 small pink capsicum, thinly sliced
  3. 1 tablespoon finely chopped lemongrass
  4. three inexperienced onions, thinly sliced
  5. 1 tablespoon lime juice
  6. 1 tablespoon sweet chilli sauce
  7. sixteen small rice paper rounds
  8. sixteen clean mint leaves
  9. half cup clean coriander leaves
  10. Sweet chilli sauce, to serve

  1. Place carrot, capsicum, lemongrass, onion, lime juice and candy chilli sauce in a bowl. Toss to mix.
  2. Half-fill a shallow dish with warm water. Dip 1 rice paper round in water. Place on a flat floor. Stand for 20 to 30 seconds or until tender enough to roll with out splitting. Arrange 1 mint leaf in centre of spherical. Place 1 coriander leaf at every quit of mint leaf. Top with 1 tablespoon carrot mixture. Fold in ends. Roll up firmly to enclose filling. Place on a plate. Cover with a moist tea towel to save you roll drying out. Repeat with ultimate rice paper rounds, mint, coriander and carrot aggregate to make sixteen rolls. Serve with sweet chilli sauce.
